I'm installing a '95 LT1 in my 3100. What if any aftermarket radiator should I purchase that accommodates not only hose alignments but also fits original shrouds?
You can buy a 3-4 row aluminum radiator off of eBay specifically for your truck. Direct bolt in with no modifications. Just read the description carefully before ordering. Usually less than $250.

FWIW, I got this summer one of the US Radiator models for my '53 Bel Air, and it is gorgeous (photo below). Stamped tank, copper/brass (although they make identical models a bit cheaper in aluminum). Made in USA. My unit is essentially a stock replacement (but with integral transmission cooler - Powerglide car), and fitment is perfect, unlike some of the off-shore sourced aluminum radiators. I have used the less expensive aluminum ones in the past. No longer.
US Radiator has options for several styles, depending on original engine or swap, with or without integral transmission cooler. They have specific units for Chevy V8 swaps into the trucks.
If sourced from one of US Radiator's authorized dealers, they can beat list price by more than 30%. Just FYI, I used Todd Walton - Walton Fabrication - and recommend him for his customer service.
my primary radiator for my 292 is tig welded with 2-1 1/4" rows and a 3300 cfm chrome fan on it. It was a little north of $1000. My secondary Davis horizontal mount radiator 16" x 18" (I think) with spal fan was $850. The secondary electric water pump was $350. So as said above how much do you want to spend and what do you need or want. Always over engineer and leave room to grow. JMHO.
