I finally found / purchased a rim and hub cap for fitment from Jim Carter truck parts.
Rim and hub cap fits hub and spare tire carrier! This is exactly what I was looking for. I think they look great.
I'll be painting the rims black - as they will eventually match the running boards when I paint them black.

I settled for a 15" rim vs a 16".
Rim is 15x5 , 6 on 5.5, with 3" backspace.
Now to order 4 more.

For the 16x6 rim I was planning on mounting a LT215/85R-16 tire.

What is recommended for the 15x5 rim for this truck?
I will be keeping the original drive train - so speeds will not be over 45 MPH.

a 215/75-15 will fit your rim and will be 28" tall. a 600x16 would be about 29" in comparaison

Diamond Back tire has some interesting 15" choices, specifically designed to look more or less period correct. They have an interesting process to bond white walls on modern radial tires, if that's of interest. Just watch the load rating, in any case. Diamond Back 15" Tires

period correct? white walls? cool

(black wall radials will at least look period correct on an A-D truck?)

Nonetheless, a good friend has white wall radials on a black 1953 GMC pick up - they look good.

Ha! Well, I did say, more or less...

But really, if you just look at the options on their website once a tire of interest is IDed, you can see they offer many of their tires in smooth blackwall.

I was just intrigued by the white wall vulcanizing on a modern tire... didn't mean to suggest that was the right answer for everyone.

Installed new tires and rims - huge improvement with the steering!
I really like the 29.5" tall radials that look like the stock bias ply.
Thank you everyone for you help on this one.

For reference, this is what I bought:
Rims and hub caps from Jim Carter Trucks

Rims: MST150 steel 15x5 6 lug 5.5 bolt pattern
Chrome Hub Caps: MST159
