I have a 2001 Suburban, original owner. The horns are shot. I like the sound
of the earlier 12 volt horns. I would think that a 50's 12 volt should work being
12 volt is 12volt. Is my assumption correct.

I do not want to spend money only to find out that they will not work.

Depending on what 12v 55/56 or later horn you plan to use, be sure to get the relay-fixture, if there was one.

The older horns will pull more amps than the newer ones. Just make sure your harness can handle it during "Road Rage" or when you are driving behind my very close relative (Wife). LOL
My 55 horn has aprox #14 wire on it, haven't looked at the newer vehicles for that.
If you have a smaller wire feeding your horn and you use it a lot , you may need a bigger feed wire to keep it from melting.
But for the short "toot toot" i would use it for, probably wouldn't bother it.
Just my opinion, not necessarily fact, I've never done it. Though it does sound like a good idea.

Heck, I've used 6-volt horns on 12-volt trucks. Horns are intermittent use, so they can tolerate a lot of current mismatch.
