Is the float level set correctly?
If the carb is in good shape then the fuel pump may be losing output or draining back to the tank.
Chevy engines should start easily with just the choke as long as the float bowl contains fresh fuel and the ignition is in good shape.

Pull the top off and adjust the floaat setting. check the piston on the accelator should fit tight but not too tight.
