I have a rebuilt 235 and I am currently running an 11" (10 and something") clutch and 9 bolt pressure plate with a T5. My question is do I need to run this size or is this overkill. I have smaller size flywheel PP combos so I'm just curious what size I really need when I go get a new clutch plate to match the 26 spline T5. I don't hotrod just go to parts stores etc.

10 3/4" is what I think you have. It should be fine. Anything 10" or larger should be ok. Based on what I've been told by clutch guys (guys who do this for a living, that is), just stay clear of the 9" disk. Apparently they don't last long and have other problems. I'm going to be using an 11" disk, pressure plate and flywheel on the 1959 235 behind which I'll be running a T5 NWC (Astro Van) transmission, by the way.
