Can I put the battery on a tender and forget it? Not sure how long it will take me, maybe 2-3 years if I'm lucky?

Be sure to monitor the acid level at least once a month while it's on the charger, and add clean water (never acid) to keep the liquid above the top of the plates. Jerry

That's the best way to monitor the battery, by measuring the strength of the acid. Most parts stores will have a hydrometer in stock, or there's always a few of them on Ebay. They're very inexpensive, and there's no better way to check any battery with removable cell covers. Jerry

How that would work over 2-3 years I don't know since I've never stored a battery that long. While I'm not a battery expert Jerry's advise on putting it through occasional discharge/charge cycles sounds like good advise to me.
