my 1959 261 with the 180 degree thermostat runs 180 degrees at the gauge. You are running too hot. Good idea to find out that is causing it. I too have an IR gun, and I don't get numbers that high. The first thing that comes to mind is sediment inside the block (from looking at your numbers).

I wouldn't ignore this.. its too hot.
