Another option would be to use the stock on-off switch and a horn button style switch for the starter solenoid. I think thats the way many of the early cars were set up- push button start.

If you wanted added security, you could conceal the push button switch, or make it innocuous by locating it in the choke or throttle cable spots and slap a stock looking knob on it.
