I just finished re-wiring my '63 and I can't imagine trying to do it the way you are talking about. This of course assumes my limited abilities, but one of the first things I did was rip out all of my old wiring to keep from getting confused. I suppose that it is possible...better you than me! If it were me I'd try to find alternate transportation while the re-wire was in progress.
