I know a guy that had a place down in San Diego
skin the black side wall off, to get his wide whites. He has them on a 59 vette. They look fine, if you have a garage hound that only goes to a show once a year, may be alright, since they will go bad wether you drive them or not, but I wouldn't do it for a normal driver. One thing about factory wide whites, they usually have a raised ridge around the outside of the white, to keep you from scuffing it. On a side note, a friend of mine had a Coker tire break the radial bead in one of his tires. Cokers first question was if he was running the recommended 35 psi. in the tires. He was running normal 32. They replaced it, but said you have to run the stated pressure. He's put about 60,000 on his 60 vette since, with no more problems.
