Those three terminal linear regulators if you float the ground pin with two diodes in series will increase the voltage by 1.4V giving a nice 6.4V output. LM7800 and LM7900 will put out 1A fine for running the temp guage and fuel and could be mounted right to the back of the cluster. They make the 3 terminal regulators in up to 10A.
