Anyway, I would appreciate any comment on what these parts should look like, and any advice about what i might do to get the throttle at the dash to work

here are some pics off my truck. Your return spring is set up differently.
...pic... ...pic... ...pic... Just as suggested above, you can simply re-drill your rod for a new cable and stop.
Personally I like the old repair. If you do decide to change if over try posting in the swap meet section for Accelerator rod and linkage.
