If its already at 12% I'm not sure how much more I'll get it down short of running it through a Kiln. I am planning on letting it sit a month or better at this point cause I'm gearing up to strip the bed. I figured I'd get it into 1 - 1 1/2 in slabs and store them up against the ceiling in the garage before planing them down come spring. I bet the scraps would make really good chop sticks.
