From what I understand, they don't make grade 8 in stainless, because of how soft it is. leave the stainless for sheetmatal and non-critical parts, like what the others said.
And don't forget, anything you do use stainless on, coat the threads with anti-seize. If you don't, the threads will gall, ending up with a broken bolt or karked up threads.
