seems 5 or 6 quarts should be enough, regardless of how deep the pan is,the pickup is still pretty much at the bottom. And it is still 5 or 6 quarts which I know will be adequate for a small v8, as every one I have ever had only held 5 quarts, I'm thinking you should go with 5 quarts unless you find out different for absolutely sure. An extra quart might get into the crankshaft and foam the oil like you said, and unless you are racing this engine, 5 quarts should be plenty. (or 6 if you like) But I guess the main point is to have enough, and unless you have some really odd shaped pan, 5-6 quarts is an adequate amount of oil, as determined by the sheer number of V8's out there with 5 quart pans. anything after that COULD be counterproductive. You could measure the oil pan and compare to some other pan of known capacity. to see if the extra capacity is in depth or width of pan. Or any at all...........
