Wiring can nickel and dime you to death if you plan on a rewire witch it looks like you are in need the pre built harnesses turn out way cheaper in the long run. E-Z wire is good and seems to have the best pricing but even the more expensive ones are a bargain.
A friend and I rewired my 64 GMC and although my friend is very good at automotive wiring and did a bang up job in the end it would have been much cheaper to use any one of the aftermarket harnesses available. Oh and other than a couple of days room board and beer that would have all happened anyway my friends’ labor was free.
