Is this how the factory would have done it or were they stencilled?

They were
SCREEN PRINTED, which is a process which applies a coat of paint through a fine mesh screen. Dry transfers are a coat of paint with a pressure sensitive adhesive which yields the closest possible duplication of that process without the expense.
