I think Edelbrocks are just tuned more for street engines with decent vacuum and normal driving conditions. They aren't tuned perfectly for anything, but they're good enough for most. That's how I've come to look at them. And I really think that's how they want to be seen, which is why there isn't a whole lot you can do to tune them.
