The
Universal Joint Ball Adjustment, as Pete says, is found in the Shop Manual. It is not in the Universal Joint section; it is in the Transmission section.
The cork oil-seal should not be in place before starting the shim/gasket adjustment procedure. As has been noted in other discussions on this topic, different u-joint-cover gasket sets come with a different number (and different thicknesses) of shims/gaskets. The sets with more shims/gaskets (and, thinner shims) allow for a better adjustment.
