The same thing happened to me when I replaced the water pump and thermostat. Finally I would let the truck cool down, let some coolent out, refill with water, ran the truck until it started to over heat again. I did this three times and finally it stopped and I haven't had a problem since. I'm not sure why this happened but I'm thinking air.
