I like using "Foamy Engine Brite". I don't remember who makes it.
I just go to the local car wash, spray a couple of cans on the engine and under the hood, and then use the "engine clean" option on the pressure wand to rinse it off. Then I spray some straight Simple Green on what's left, and use the wand some more. If you did a god job sealing off any openings to the engine, you can use a higher pressure setting on the wand.
The oil/water seperator at the carwash will do what it's supposed to do.
All this is on a cold engine (vehicle on a trailer, or a very close car wash).
