That is a beautiful looking setup, a lot of attention to detail and your work is very well done. The linkage for the Offenhausers is a real tough gig as you have found out.
Have you disconnected the linkage between the carburetors and done a preliminary adjustment to each carburetor with the engine running? You should be able to do this and it will make tuning them together easier.
It's important to get the throttle plates closing completely, then to get them adjusted with the idle speed screw exactly the same. Try doing it one carb at a time with the linkage removed.
The small single bolt where the linkage attaches to each carburetor throttle arm is a real bugger. If it isn't completely tight and locked, it will move and then one carburetor will be down on the idle screw and the other won't.
