If you can afford it, I would go with Stainless. I don't know if originality is a big issue,but for looks and durability Stainless wins every time!
Where possible I have used Stainless bolts/fasteners except where there are high tensile/shear factors. I have used grade 8
bolts in these situations, i.e Engine/suspension mounts etc.
This was on the advice of my local hardware supplier.
