Some sludge in the sump is normal if the engine was using non-detergent oil.
A small amount of water is also nothing to worry about, as condensation will have settled in the sump over the time that the truck's been sitting idle.
But once it's back in regular use,water shouldn't be evident in the oil - something's wrong if that is the case.
