Ryan- the 350 in my 57 presents the same problems you are facing. My first choice were the stock manifolds which drop below the plugs, what I learned as Chevelle-style manifolds. Great on the drivers side, but on the passenger side the manifold dumps directly into the crossmember, so I nixed that plan. I bought a pair of block-huggers from Summit Racing, but discovered that I can barely slide a dollar bill between the starter and the header collector flange. Plan C is a different set of headers which drop straight down from the heads, and discharge under the transmission cross-member. Looking for recommendations from the audience.
