DOT 5 brake fluid is silicone based and not compatible with DOT 3, 4, or 5.1; which is glycol based. Unless you completely flushed all the old glycol based fluid out of the system, or preferably installed all new parts, the DOT 5 may be gelling up and not flowing like it should; which could cause your issues.
