Given you location, you’re facing a very typical overheating issue that arises using a shortened stock style water pump on a 235 swap into your truck.

A better solution is to use an adaptor plate (and the original 216 water pump), designed by a fellow Member Pre ‘68 Dave and offers a pump relocation kit that will put the water pump in the correct "sweet" spot for getting that engine in your truck and providing the best cooling.
