A thermostat sets the minimum operating temperature. Unless you live somewhere winter weather doesn't get much below freezing, a 160 won't get the coolant hot enough to make the heater work efficiently. Max temp is determined by the size and condition of the radiator, but unless you're pulling hard for a long time, a proper size cooling system in good shape should stay pretty close to the thermostat setting.
