Sounds like you are on the right track!
You can cut the clutch pedal arms off, but you need to leave the round part that mounts on the axle where the brake pedal mounts so that the brake pedal will be where it needs to be. You could also just unbolt the pedal arm and fill the hole in the firewall, then if you ever wanted to restore it to stock or sell the pedal assembly you could. If you are sure you don't ever want to do that, there are dual master/booster kits which include the pedal arm that might work better than the stock pedal.
