Welcome to the 'bolt. It's nice to keep old vehicles in the family, and even nicer when there is a father son project.
You will get plenty of advice here. If it was my truck, I would ensure that it runs, drives and stops safely before starting to tear it apart to "restore" it. Drive it around some, let your son learn to drive it... you might never get around to restoring it!!
