If period-correctness isn't a concern, I like to use Holley regulator 12-804 (adjustable 1-4 psi), which is relatively inexpensive and works well with electric fuel pump setups, and would solve your "flooding" issue. With this type of setup, a small mechanical fuel pressure gauge near the carb is nice to have, and there is an extra port on the Holley regulator that can be used for one.
