Alloys also have a lot to do with cooling and keeping things cool. Hot lapped at the dragstrip my ols SS would stay right in the 185-190 range. My buddies auto-x vette also stays nice and cool. Sorry, I don't buy the heat exchange theorey.

With the right radiator / fan set up you can keep that motor real cool.
