Start by taking pictures. Have several plastic baggies handy to put small parts in, and mark them for where they go.
For some reason, I can't find my "olde" truck book, but I was able to find my car book, which should be essentially the same as a truck. I'll post some pix when the internet speeds up a bit.
My car book says to "disconnect everything" that is connected to the engine from the car, then goes into other things like pulling the radiator, ect.
