When I'm fabricating motor mounts I put a carpenter's level on the intake manifold carb flange and level it both ways. Of course, the suspension needs to be close to its normal running height, front and rear. If your engine is already installed it would be simpler to machine the top of the manifold to correct any out of level problems.
