I did something similar when I was back in high school. I had a 47 Ford coupe with a flathead V8, bored 80 thousandths oversize. That turned a 239 cubic inch engine into a 252. I installed a 2-barrel carb for a 55 Ford 272, and got a horrible flat spot on acceleration. Even with drilled-out main jets and lousy gas mileage, the bog just off idle just wouldn't go away. I had to nurse the RPM up a little at a time to get up to the point I could nail the throttle. It ran pretty good once the engine was wound up, but getting there was a challenge!
