Over 30-something years of dyno runs on round track engines, I've discovered that most small block V8's (Chevy, Ford, and MOPAR) develop their best torque at full throttle at around 36-37 degrees of centrifugal advance. Depending on the cam you're running, centrifugal advance should probably max out somewhere just below 2500. If you're detonating under moderate load at low RPM, check the exhaust!
