I finished the reupholster job of the bench seat and got it back into the truck. All in all I'm pretty happy with the way it worked out. I did end up using the C clips in the same manner as the original V clip. About the time that I was finishing up the project, I had refined the technique and it was going pretty fast and looked pretty good. I guess I'll leave it to all of you to determine the final verdict (see pic). If I were to do it again, I wouldn't bother trying anything else, I would just use the clips inside the channel the way that Chevy did. There are still some creases from the material sitting in the box for so long, but I'm sure that they'll go away once it warms up outside.
