There should be plenty of cable pedals available, either salvage yard or aftermarket like JEGS or one of the other race equipment suppliers. Just do a little geometry homework and figure out how much cable travel you'll need to get smooth operation from idle to wide open throttle and fabricate some bellcranks. Be sure you've got a good return spring right at the carburetor- - - -a broken cable or a slipped clamp can increase your pucker factor if the throttle doesn't close right away!
