Once you use DOT 5 in "an all new system", I think you are as good as "stuck" with using it forever.
Are all parts new? Including brake lines?
I did the same thing around 18 years ago, and I do not know why.
If you bleed your brakes regularly, you should have no problems with "normal" brake fluid.
