That's how I do it but the guys here will tell you that I have no idea what I'm doing so.......
Seriously, I have done it that way several times and I find jacking it up in the center makes it harder for the truck to slip off the jack or stands rather than trying to get one side up at a time. Just feels safer.
But..... let some of the other guys confirm this as I AM NOT an expert.
