After having swapped V8 into a small assortment of vehicles, the AD Chevy truck (which I have not done one in) has looks of one of the more simpler installs, mostly do to space.
But it also still has all the standard swap requirements and modifications.

http://www.trucktrend.com/how-to/engine/0404mt-v8-conversion-engine-swap-guide/There are many weld-in and bolt on cross members for transmissions and side engine mounts that are universal fit and likely some exact fits. Search your options and find the one that meets your needs.
As for throttle, use LOKAR cable throttle (unless your going fly by wire) again they make various kits with or without pedal. The cable kit is flexible and easy to install and very reliable.
As for exhaust unless your dead set on headers which can be custom made for even the tightest of clearance issues. Stick with the classic Chevy 350 cast rams horns if they will bolt to your version of heads, if they will not then find after market version for your heads. These a very efficient, look classic and take the least space for side clearance.
As for cross members remove only as last resort, notch or modify first, if removed make sure you see if a custom built cross member or relocated cross member can be fit.
I bought a book, 30 years back, that was the install guide for small block Chevy swaps into any thing, it was loaded with tips, dos and don't if I can find its name I will post.
It had all the info from engine leveling, firewall spacing issue fixes, different water pump mods for radiator spacing, of course rams horn manifold. motor mounts, radiator options and more.
Every swap of a V8 into any vehicle is different then others, part of the fun of it. Your truck will be unique!
If some one else has done it one way does not make it the best way or the a right way.
SO PLAN, DRY FIT, MEASURE TWICE.
But do get it done and enjoy the build.
