A brake shoe backed off too far can also 'grab' on initial application.
I'm not sure if you've road tested the truck after backing the 'offending' shoe off,did it cure the problem?
I agree with Wrenchbender,although it's a while since I've done brake shoes I used to file a slight chamfer on the leading edge of each shoe too.
