I'm guessing that a GMC 270 bell housing doesn't have a Muncie pattern for the tranny to bolt to. Is that right?

Even if you need an adapter plate to mate the S10 to the bell, you might consider swapping the S10 input shaft for a Jeep T5 input shaft. The Jeep input shaft has 10 splines and will allow you to use a more common (and cheaper/easier to find) clutch kit instead of searching for the more expensive 14 spline Astro clutch kit.
