If you're gonna do a V8, undoubtedly the least expensive, easiest to find parts, easiest to work on is the small block 350.
Was gonna put a 350 in my truck but, I'm sticking with my inlines (for the above mentioned Britney reason).
Seeing as how you're in San Diego and all, I got a 4 bolt main 350 long block sitting in my garage. It's in good shape and it's yours for the price I paid in gas to get it home from Vista. Came out of a '75 Chevy truck. Just send me an email.
