I would check the t-stat like Hollow65 suggests, then replace it with a new one which has the little air bleed hole in it to purge the air that gets trapped in the head. I have had t-stats hang up in the closed position intermittently, making diagnosis very challenging. T-stats are cheap, so I replace them when I have overheating problems.
