I know that it must be on this site somewhere but I haven't found it, so please bare with me with the question. What thickness foam padding should I use for the seat bottom and back?

I used one inch, but the important question is density. Hard or soft foam? Select density according to your needs, but usually the denser the better ride and the longer it lasts.

This is how I put my seat together. After repairing and painting the springs, I used new jute burlap material to cover them and look like original. Next I cut a section of heavy-duty house type carpet a little less than the length & depth of the seat bottom. This gave some structure to tired springs and made a great foundation. Next layer I used about 1-2 inches of polyester batting similar to original cotton. To top this off, I used a one-inch layer of foam, letting it drape over the front edge several inches. The seat cover was stretched very tightly over this. I used the same method on the seat back except did not use the carpet. This made a very attractive, comfortable and solid seat.

Any thoughts on using a memory foam type material? I have an old king sized mattress pad that we had on our bed before we replaced the mattress with a better one. I still have the pad in the shop. My old lab loves her memory foam sleeping pad in the shop, its good for her retrieving bones.

It is a king size and still has plenty of it to use to do the bottom and back. Thoughts? Upholstery is an area that I have next to zero experience with. It is about 2" thick.

I wanted to put a layer of memory foam on the '48 seats thinking it would be really comfortable.
When we mocked it up, it was obvious that it wasn't going to be good.

Unlike dense upholstery foam, memory foam responds slowly and compresses more. It just doesn't respond to bumps, shifting around, jouncing etc. nearly as well.

I ordered a rebuild kit here,
a seat cover here,
and this is the finished product. I'm very happy with it. If you scroll to the left or right from that last pic you can see the rebuild kit before it was covered. I probably could have shopped around and found the foam and other components cheaper, but sometimes I get tired of the guess work.
