I have a couple questions about plumbing the new tank I'm installing under my bed.

There are three valves coming out of the top of the tank. Two of them have pick up tubes that go to the bottom of the tank, and one is just a hose barb end that has no pickup tube. I'm guessing one of the ports with the pick up tube is the fuel outlet. What are the other two? I'm guessing one is a return line and one is a vent?

First question- Do I need a return line? I'm running a carbed SBC with a stock type mechanical fuel pump and no regulator. The fuel pump only has an inlet and an outlet, so I don't even know where I would connect a return line. I'm thinking that with a mechanical fuel pump, a return line is not necessary.

Second question- do I need a vent? My cap is not vented, so I'm guessing I do. My tank also came with a rollover vent valve, so if I use that, does that mean I will have a vent? Does the rollover vent valve serve as an adequate vent, or do I need to run another vent in addition to that?

Third question- So what connects to what? I'm running 3/8" aluminum fuel line. Do I connect the feed line to one of the ports with a pickup tube, and cap off the other port with a pickup tube if I plan to not use a return line (since I'm assuming that the return line would connect to a port with a pickup tube), and connect the rollover vent valve to the hose barb port on top of the tank that has no pickup tube?

Well just to get the conversation started I think your assumptions are right. I did not check out your linky. And no you don't need the return unless you are running fuel injected.

Yes you need vent or gas pump will shut off when you are fueling it. And use the rollover valve for safety just make sure it is in the right direction.
