An electric fan set up will be fine for you as long as you ascertain the right size
fan... (bigger is better, usually)
and determine whether it's gonna be a "pusher" or a "puller".
I run mine on a fan relay and a switch
in the cab.
Failures of the thermostatic controls and probes I've had over the years causes
me to avoid them.
But, I'm sure you'll move enough air on your application. I've found that I don't even need the fan(s) on at highway speeds.
I've run these set ups on 350's in tight quarters on early Ford hot rods, and on my small and big block Buicks with no problems.
My current 51 panel has the 455 Buick with a 16 inch electric fan mounted on the front of the Radiator on a Painless fan relay kit. Been hot here lately and it works fine
