I am thinking of adding a hitch to my 59 Apache (283). Any tips on how to approach this project would be appreciated. Thanks.

If you want it to look original, a fabricated bumper notched out to allow the tail gate to drop would be in order. If you just want a hitch, modify a receiver hitch to fit your frame. Do you have a bumper in back now?

This is a drawtite. I ordered it in from a local dealer . It was a pretty easy install and looks clean to me.

It's a 5000lB hitch, pretty sure the part number is 75034. You'll still have to supply dimensions though.
