Rebuilt engine what kind of oil would you recommend on breaking it in with.

John Deere break in oil. After the break in, any good, high quality, multi-viscosity oil, with a high detergent.

30 weight non-detergent with either GM EOS suppliment or Competition Cams break in lube. I personally prefer Valvoline.

Do you think running engine for about lets say 1000 rpms for 20 minutes would be sufficent

Engine Oil Suppliment. Should be able to get it either from any parts store that is an AC/Delco dealer or the GM dealership parts department. Most guys use 2 bottles of it (I did).
For break in, you'll want to run about 2000-2400 rpm, varying the rpm during the process, for about 20 minuits. Don't let it idle at all. If you need to idle, shut it down, do whatever you need to do, then restart ( I had to do that, didn't put enough feul in the tank). Change the oil and filter. You'll also want to go through the valves.

patrick's says z-d-d oil additive and valvoline vr-1 oil. and several places say to re-torque the head bolts while the head is still hot

Retorqueing the head will depend on what gasket is used. many modern head gaskets do not require retorquing. You'll want to consult the gasket instructions to determine if you will need to do that.

composite/copper gaskets require it?

Copper gaskets do, composite gaskets can vary, depending on what it's made of. I personally use Fel-Pro, and did use a composite gasket on mine. It did require retorqueing. But as I noted, gasket technology has changed over the years, even in the years since I assembled my engine. Many newer gasket material have gone to the no-retorque style. The instructions that come with the gasket set, which will also tell you what kind of sealers you should use with which gaskets if needed, will say whether it requires retorquing. If it doesn't say, though, then retorqueing would be a good idea.

yeah, the fel pro complete set caught my eye, but i didn't know if $90ish bucks was a fair price for quality, or mostly paying for a name

I swear by them. I've had problems with other brands not having the right fit. Plus, pretty much all of the parts I use both on my own vehicles and customers vehicles come from Federal-Mogul (parent company of Fel-Pro) because I like the superior quality.
